the walnuts are strained and the spirit sweetened before a nine-month resting period in stainless steel and glass demijohns that are placed near the windows of the distillery to sun-mature

The first batch of this came to the US in 2017 and was just 193 bottles in size

before bottling in May 2021

Soils are of volcanic origin, reddish brown silty sand. Native yeast, spontanteous fermentations in steel. No temp control. Elevage in steel. Unfined, unfiltered. Organic, awaiting certification.
